Method
 

Instructions
  1. Preheat the oven to 350°F (175°C) and generously grease a large baking dish.
  2. Whisk together the eggs, heavy cream, 1/4 cup of granulated sugar, vanilla extract, and cinnamon in a mixing bowl until frothy and well combined.
  3. Dip each slice of brioche into the custard mixture for 2-3 minutes per side.
  4. Arrange soaked slices in the prepared baking dish in a single layer.
  5. Bake for 30-35 minutes, until golden brown and puffed up.
  6. Sprinkle the remaining granulated sugar evenly on top and use a kitchen torch to caramelize until bubbly and golden.
